Fresh goat milk tastes clean, creamy and with a slighty nutty sweetness. When you sometimes experience cheeses that taste of a too strong goat flavour, it is caused by the milk developing too many capron and caprylic acids, which gives a taste we do not want in goat products.
We avoid this by using only fresh milk that is rapidly chilled and at the same time we treat the milk very little in the cheese production. We demand a high quality from our suppliers of goatmilk. When milk is converted into cheese, we experiment with different lactic acid cultures. Our fresh cheese has a slightly tart freshness, while our semi-hard cheese has a nuttier flavor.
