Fresh Cheese

Fresh Cheese is a freshly produced cheese on unhomogenized goat milk. We add a lactic acid culture that gives a mild acidic taste. The cheese is not aged and therefore the water content is also higher than a hard cheese and brie. The Fresh cheese is eminent in a mix with spices and flavours.

We have chosen to make a natural fresh cheese Vita Mundo that you can mix with your own ingredients. Rosa Mundo has been our most sold cheese since the 80’s. This fresh cheese is packed in an organic sunflower oil with rosemary, thyme and pink pepper.

Storage

Vita Mundo must be eaten within 1 week of opening.
Rosa Mundo can last up to 30 days below the oil if you always use a clean utensil for handling the cheese.

Semi-hard cheese

Semi-hard cheeseis also produced with unhomogenized goat milk. Here we add a different lactic acid culture that gives the cheeses a little longer journey through drainage, hand salting with sea salt and longer storage.

The taste goes from fresh, slightly tart and mild (stored 1-6 months) to a characterful, but slightly sweet taste (stored 6-12 months). Flora Mundo is a pure white goat cheese flavoured with sea salt. Fenna Mundo has a slightly sweet aromatic from fennel seeds which are sublime to the goat cheese

Storage

Semi hard cheese often becomes harder and more characteristic with age.
Store the cheese with a lot of air around it in a box with a lid. The most important thing is that the cheese can breathe without drying out.

Geta is our answer to the classic salad cheese.
Geta is a white soft cheese that has been on holiday in a salty brine.

Geta is best to eat within a few days of opening.
It mostly disappears by itself too …
